Reviews regular and therapeutic menus and sets up equipment and supplies for food preparation. Prepares food allowing standardized recipes, excluding breakfast. Provides for prescribed therapeutic diets, including variations in texture. Ensures meals are served on time, at appropriate temperatures and in portion controlled quantities following HACCP guidelines.

In the absence of the Food Service Nutrition Manager, decides on menu changes as necessary and ensures that changes are recorded following department procedures.

Monitors quality of food supplies ordered, and proper operation of kitchen equipment and alerts supervisor to problems. Recommends corrective action.

Directs Dietary Aides in basic food preparation procedures and in serving activities at meal times.

Adheres to departmental policies and procedures for department including sanitation, safety, and quality assurance.

Assumes responsibility for routine departmental operations in the absence of the Food Service Nutrition Manager, including assistance with staff replacement and service calls for malfunctioning equipment.

Maintain required records such as menu changes, delivery receipts, temperature checks.

Collaborates with other departments to meet resident needs.

Reports to Food Service Nutrition Manager when food supplies are low so replacements can be ordered.

Quantity of food necessary must be carefully determined and preparation carried out to ensure proper portioning, prevent food waste and assure high quality foods served on menus.

Follows all health & safety policies and procedures as set out in the employee safety program handbook and department manuals.

Works safely to reduce the risk of injury to self, co-workers and residents.

Is alert to and promptly reports all actual or potentially hazardous situations to immediate supervisor.

Does not operate or use faulty equipment.

Wears personal protective equipment (or clothing) as required by task, M.S.D.S. or facility policy.

Promptly reports personal injury to supervisor and seeks aid as needed.

Participates in fire safety demonstrations and fire drills, and knows the facility fire and disaster plan
