ABOUT THE ROLE
The Chef de Partie oversees the Savu Bistro and Koivu Restaurants, ensuring they run efficiently in the company vision seen fit from Head Chef. The successful candidate will be the outlet helping the Head Chef run the dining room.
The Chef de Partie would be the point runner of the production of all Savu/Koivu items and will have the cooks follow through with instructions.
The successful candidate will be the liaison to the Head Chef while the Head Chef attends to inventory, menu costs & development and run the dining room until Head Chef joins for service. They will also act as a leader and make decisions in the absence of the Head Chef.

DAY TO DAY
Operations
  • Assist in the day-to-day operations of the Restaurant outlets and ensure proper portion, arrangement and garnishing of food
  • Ensure that required standards are adhered to in the production and preparation of food – in quality, quantity, and safety.
  • Produces high quality plates, including both design and taste
  • Keeps stations clean and complies with food safety standards
  • Adhering to weekly cleaning protocol, plating standards, food quality, sanitation, inspect the closing operations
  • Coaching kitchen staff and assists with performance reviews and recommends discipline
  • Offers suggestions and creative ideas that can improve upon the kitchen’s profitability
  • Collaborate with the Food and Beverage Team in creating unique, healthy, and flavourful menu items with an emphasis on using sustainable and local ingredients while paying homage to the Finnish Culture
  • Responsible for the daily preparation of food items
  • Monitors and ensures the maintenance of kitchen equipment
  • Make recommendations to Head Chef for improvements
People
  • Provides direction and motivation to line cooks and kitchen support staff
  • Follows and enforces kitchen cleaning schedules
  • Encouraging team to complete tasks thoroughly and on a timely basis
  • Address general employee issues and reports into the Head Chef
  • Monitoring employee conduct
  • Assist with recruiting and training new employees
  • Solves problems or issues than may arise in the kitchen
  • Abides by and ensures that all legislated safety requirements and in house policies are adhered to
  • All other duties as required
WHAT WILL MAKE YOU SUCCESSFUL
  • Minimum of 4 years working in a fast paced, fine dining environment
  • Culinary training, Red Seal Certificate, or equivalent
  • Must be an employee at Vetta for minimum 3 months
  • Food Handlers Certificate
  • Knowledge in dietary restrictions and food preferences such as plant based, vegetarian and gluten free
  • Experience in working in a fast-paced fine dining environment
  • Previous leadership experience
  • Able to make sound decisions
  • Work well under pressure
  • Required to work a rotating schedule including weekends, evenings, and holidays
  • First Aid and CPR certificates an asset

  • Able to work in a fast-paced environment
  • Comfortable walking, standing, and bending over an 8-hour period
  • Work in an environment with minimal temperature control
  • Able to lift max of 50 lbs.
