Our Dining Room Team is instrumental in our success by helping to create special and lasting memories for our Guests.

In overseeing our Dining Room Team, you will enjoy working in a fast paced, Team oriented environment. Your passion for Guest service and flawless attention to detail will combine to produce a seamless event with personalized attention.

Primary Responsibilities:

· Providing personalized and exceptional guest service at every given opportunity.

· Meeting established up-selling and sales goals.

· Ensures that the Restaurant, Lounge, Room Service, Mini Bar Operations and Kitchen in conjunction with the Executive Chef, are fully operational in terms of both quality food and beverage and sufficient Team Members to service guests.

· Performs the human resources functions relative to hiring, training, promotions, motivating and terminating Team Members as required. Specific attention to training in order to maintain four diamond status.

· Ensures the Team Members within Food and Beverage are aware of and follow all safety policies and procedures.

· Develops and implements ongoing sales and marketing initiatives.

· Oversees the preparation of wine lists, menus and other promotional materials as required.

· Responsible for the Food and Beverage preparation and implementation of departmental budget.

· Ensures that budgetary guidelines are monitored and maintained in all hotel Food and Beverage throughout the year.

· Liaisons with other department managers and supervisors on an ongoing basis to ensure that all activities of the Food and Beverage are consistent with hotel departmental requirements.

· Ensures Food and Beverage are effectively and efficiently carried out with appropriate follow-up where required.

· Assists the conference and banquets operations to achieve optimum performance.

· Oversees cleanliness and tidiness of Food and Beverage.

Technical/ Managerial/ Administrative Requirements:

· Demonstrate knowledge of food and wines matching, food and wines service styles and menu writing.

· Knowledge of POS in Food & Beverage.

· Demonstrated ability to control costs including inventory, labour, etc.

· Initiated food and beverage promotions.

· Demonstrates strong planning and organizing skills.

· Developing and implementing annual budgets, profit and loss, and capital expenditures.

· Developing annual promotion and marketing plans.

· Team Member scheduling.

· Revenue stock control.

· Food and beverage variance analysis.

· Knowledge of Restaurant Reservations system.

· Supervises & directs Restaurant, Banquet and Lounge Team Members, Room Service, Mini-bar, and Team Member Restaurant Attendants.

Professional Requirements:

· Graduate of hotel administration diploma, degree program or similar.

· Minimum of eight (8) years post graduate hotel experience, gained in deluxe Food & Beverage including:

· 2 years Restaurant Management/Supervisory Experience

· 1-2 years Banqueting & Special Event Management experience

· Exposure to a multiunit operation

· Management experience as a multiunit Food and Beverage Manager or Assistant Food and Beverage Manager in a deluxe hotel.

· Solid technical knowledge of food and wine.
