Food and Beverage Manager

Elmhirst’s Resort is an all season, cottage resort and conference/wedding facility located on Rice Lake, (approximately 25 minutes from Peterborough). Food and beverage venues include a 50 seat farm to table dining room featuring regional cuisine matched with 100% Canadian wines, a 50 seat family restaurant with patio, a 120 banquet room, a 120 seat conference facility, plus an 80 seat conference and banquet facility. Elmhirst’s Resort is a firm believer in sustainability and practicing responsible stewardship of the land and water that is so important to our business and or community.

This position carries accountability for food and beverage service in all restaurant venues as well as conferences, weddings and events. Reporting to the General Manager.

Food and Beverage Manager:

Human Resources

  • In conjunction with the office manager the Food and Beverage Service Leader shall pro-actively recruit service team members
  • Provide orientation, training, coaching and if necessary, discipline to service team members
  • Write service staff schedule and publish on Ameego
  • Review staff hours weekly at Leadership Team meeting to ensure effective labour cost control
  • Assist office manager with staff performance reviews and administration of disciplinary actions
  • Ensure compliance with labour standards, health and safety requirements, and other requirements with assistance of Office Manager and Compliance Officer

Procurement

  • Gather weekly inventory data to provide requirements for liquor, wine, beer, supplies for all venues plus conferences, rental table linens and other dry goods to purchaser on a timely basis to facilitate effective purchasing
  • Perform a complete inventory of wine, liquor and beer between close of business on the last day of the month and opening of business on the first day of the next month for expense reporting
  • Ensure proper storage of purchases for security and easy stocking

Operations

  • Accountable for delivery of food and beverage service that exceeds guest expectations through:
  • Effective service planning for food and beverage delivery to restaurant, conference and event venues
  • Effective allocation of human resources
  • Standardized and well executed room set up and mis en place
  • Effective communication of service plans and effective delegation for optimal food and beverage delivery in all venues
  • Monitor fridges to ensure optimum use of inventory, prevent unnecessary delays in service and items out of stock
  • Accountable for cleanliness and maintenance of restaurant and event facilities and equipment
  • Maintenance of floor plan and management of restaurant reservations through OpenTable
  • Maintenance of menus and sub-menus in Aloha POS
  • Menu publishing
  • Updating of wine list
  • Attend weekly Leadership Team meetings (generally Thursdays at 14:00)

Financial

  • Accountable for delivering input costs for food and beverage service in line with budget on the following budget line items:
  • Service labour
  • Service supplies
  • China and glassware
  • Beer
  • Wine
  • Liquor
  • Bar supplies
  • Assist General Manager in preparing annual budget for these line items

Qualifications:

  • Valid Smart Serve certification
  • Experience in the hospitality industry
  • Strong leadership ability
  • Excellent communication and listening skills
  • A team player

Pay / Hours:

  • Salary starting $45,000 per year depending on level of experience
  • Full time, year-round position, 40 hours per week
