- Assist and lead in the production of our various products
- Adhere to company guidelines for yield, processing and quality controls
- Maintain exceptional consistency in product production
- Thorough knowledge of specifications with respect to PH Level, Water Content, dryness, texture.
- Monitor smokehouses for smoke and colour development
- Monitor cooking temperatures on computer readout to ensure correct temperature of product is reached.
- Verify with manual thermometer and record information in smokehouse monitoring record
- Expert monitoring of the cooking /smoking, drying and fermenting in controlled stages of production to ensure they meet all food safety and product quality standards;
- Ability to monitor smokehouses cycles to maintain quality and consistency and adjust smokehouse programing as needed.
- Follows proper food safety and handling procedures to meet regulatory requirements;
- Cleans and sanitizes equipment and working areas where required;
- Comply with health and safety and food safety standards;
- Maintain a neat, well-groomed personal appearance; and
- Other duties as required.
