The Role

Reporting to the Corporate Executive Chef, the Menu Strategy and Planning Specialist assists in the strategy, planning and implementation of menu offerings and initiatives that will deliver culinary excellence that the concept’s guests are accustomed to.

This role is a full-time (maternity leave coverage) position based at home office in Vancouver, personal home office and in store when the role requires this person to do so.

Responsibilities

  • Support Executive Chef and internal team with new F&B menu development
  • Purchasing Support: food, beverage, plateware, small wares, kitchen and restaurant supplies
  • Menu Tasting Sessions: take control of leading, setup and execution of all tasting sessions
  • Market Test Support: responsible for setting up tests, review calls, test calls and management
  • Menu Updates: work with marketing department on comp set analysis, and pricing meetings
  • Innovation: assists in restaurant innovation and bringing innovative ideas to the team
  • Feature Menu Reporting: manage the weekly reporting, and post mortem on feature menus
  • Marketing Shoots: support marketing in facilitating shoots for new food & beverage items
  • Restaurant Training Support: work with Learning & Development team on in person and virtual training sessionsind
  • New Store Opens: support Learning & Development team on new store opens
  • Roll Out Meetings: work with Learning & Development and internal team on setup and execution of meetings
  • Complex Menu Analysis: manage the financial side of food and beverage reporting
  • Menu Planning Group: lead this team in conjunction with marketing and home office team
  • Recipe Management: recipe support, transmittal updates and support
  • POSI & KDS: manage ongoing updates, and maintenance with Home Office team and operations
  • Spec Change Requests: manage in tandem with F&B requests, for transmittal and development
  • Key Changes Documents: manage all roll out documents for LTOs and core menu
  • Food & Beverage Operational Tools: LSP updates, TOD updates, Allergen guides
  • New Initiatives & Test Process: support tracking of KPI on new initiatives and tests
  • Rational Support: work with operations, and restaurant renovations on this project

Background Experience and Education

  • 5+ years of progressive kitchen leadership experience in a high-volume, fine or casual dining environment
  • Red Seal Certification or equivalent considered a strong asset
  • Demonstrated awareness of, and interest in, current culinary trends in the marketplace
  • Ability to work with cross functional groups
  • Problem resolution and strong communication skills
  • Data collection, analysis and reporting experience
  • A winning attitude and an influential personality who is gifted at developing deep relationships and who has a strong track record of achieving business objectives
  • Autonomous and a self-starter and has the ability to solve issue as they come up as well as take advantage of opportunities
  • Thrives in a fast-paced environment

Job Types: Full-time, Fixed term contract
Contract length: 12 months

Salary: $64,780.00-$71,157.00 per year
