**JOIN CHEF ANTONIO PARK’S NEW RESTAURANT OPENING**

Renowned Chef Antonio Park and Scale Hospitality are seeking passionate, experienced back of house team members to be a part of the most exciting, new hospitality openings of the year. As featured in the New York Times, the much-anticipated AP restaurant will launch this Fall atop the Manulife Centre. This ultra luxurious dining & lounge concept will boast one of the greatest skyline views in the city, as well as not one but two spectacular terraces overlooking downtown Toronto.

We are looking for energetic SUSHI CHEF to prepare sushi dishes in accordance with food health and safety regulations and restaurant standards.

KEY DUTIES AND RESPONSIBILITIES:

  • Expertly cutting, slicing, and filleting different types of fish.
  • Must be able to cut fish, make nigiri and sashimi
  • Inspecting the quality of fruits, vegetables, and fish used to prepare sushi dishes and informing the Chef de Cuisine when quality is sub-standard.
  • Preparing various types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety.
  • Maintaining a clean work environment in order to prevent food contamination.
  • Regularly taking inventory of food supplies and other products.
  • Reporting any problems with kitchen equipment to the manager on duty.
  • Sterilizing all utensils, instruments, and equipment used in sushi preparation before every use.
  • Communicating with wait staff to ensure that special requests and food allergy considerations are met.

SKILLS & QUALIFICATIONS:

  • Minimum 5/6 years experience with making all types of sushi including maki
  • Must be able to cut fish, make nigiri and sashimi
  • Must be able to manage a small team
  • Must be able to maintain high standards and quality
  • Must have good attitude, positive energy and be hardworking
  • Excellent attention to detail with a creative flair
  • Ability to work weekends, holidays, mornings, and nights
  • Must be able to follow oral and written instructions
  • Must exhibit a high degree of professionalism (i.e. punctuality, commitment to the job, well-groomed, mannerly, great team work etc.)
  • Excellent food knowledge and understanding of cooking terms/methods
  • Skills to coordinate and organize processes and people
  • Valid food handler's license.
